Vegan Tofu Scramble

The vegan tofu scramble recipe variations are endless. Try vegan breakfast sausage, cheddar cheese or more veggies.

(Serves 4)

Vegan Tofu Scramble Ingredients

  • 2 T olive oil or vegan butter
  • 1 small white onion, diced
  • 1 c. mushrooms
  • 2 cloves garlic, chopped
  • 3 T nutritional yeast
  • 1 t salt
  • 1 t black pepper
  • 1 t turmeric
  • 1 t paprika
  • ½ t cayenne (optional)
  • 1 t allspice (optional)
  • 1 green pepper, diced
  • 1 block firm tofu

Directions

In a large frying pan, heat oil or butter under medium-low heat. Add onions, mushrooms, garlic, all seasonings and nutritional yeast. Mix ingredients together and fry for a couple of minutes and add your green pepper. Fry for another two minutes and add the tofu. Crumble the tofu with a fork until you get a nice scramble texture. Mix and cover on low for an additional 5 minutes. Serve on buttered toast or enjoy alone!
