Vegan Tofu Scramble
(Serves 4)
Vegan Tofu Scramble Ingredients
- 2 T olive oil or vegan butter
- 1 small white onion, diced
- 1 c. mushrooms
- 2 cloves garlic, chopped
- 3 T nutritional yeast
- 1 t salt
- 1 t black pepper
- 1 t turmeric
- 1 t paprika
- ½ t cayenne (optional)
- 1 t allspice (optional)
- 1 green pepper, diced
- 1 block firm tofu
Directions
In a large frying pan, heat oil or butter under medium-low heat. Add onions, mushrooms, garlic, all seasonings and nutritional yeast. Mix ingredients together and fry for a couple of minutes and add your green pepper. Fry for another two minutes and add the tofu. Crumble the tofu with a fork until you get a nice scramble texture. Mix and cover on low for an additional 5 minutes. Serve on buttered toast or enjoy alone!
